BIRORI

The
town is situated to the slopes of the mountain of
the “Marghine”, in the northern part of the
plateau of Abbasanta, at approximately mt 450
above sea level. Its territorial surface counts
17,35 Kmq. Birori is the first town in Sardinia
equipped of detailed plan for archaeological
monuments; its territory counts 60 interesting
archaeological monuments, such as Nuraghi (Miuddu,
Sorolo, San Giorgio), Tombe dei giganti (Palatu,
Lassia), dolmens. Between the most important
historical buildings we can find the church of
Santo Stefano, built in 1500 and restored recently,
in which we can admire the magnificent wodden
statue of the Saint and the paintings dedicated to
him.
Birori has two aspects that characterize its
features: an ancient part that goes around the
Church of Sant’Andrea, with little streets and
nice houses built following the models of the
ancient Sardinian architecture, and a modern part
with new constructions, equipped with sports
complex, one library, the social center. The town
is equipped with nice green spaces of Funtana Idda
and Funtana Maggiore.

Culture and traditions
Festivity of S. Antoni 'e su fogu: 17
January. Around to the great bonfire, favata with
cotiche and lardo for all the participants.
Festivity of S. Stefano: from the 2 to 5
August.
Festivity of the town organized in the church yard
of the Church of S. Andrea. The 2nd of August the
procession from the parish to the church dedicated
to the Saint.
Novena of S. Stefano: it begins the 2nd
monday of the september. Dances and songs are held
in the church yard.
Festa di S. Andrea: 30 November.

week:
S'iscravamentu - Holy Friday
Religious paly of the deposition of Jesus Christ
from the cross followed by the Via Crucis in the
streets of the town: procession with the statues
of the dead Christ and the Mother Mary.
S'incontru – Easter Sunday
Procession in the streets of the town and meeting
of the Revived Christ and the Mother Mary.
Typical plates
The Marghine leaves a strong intense memory in its
visitors, not only for its evocative landscape,
mountains and festivals, but also for the tastes,
essences and flavours that belong to the art of
“eating” in this segment of Sardinia.
Even though the distance that separates the town
from the sea is minimal, the culinarie
specialities of this region come mostly from the
earth, Here, therefore, the presence of numerous
plates coming from the country such as bread to
slice and boiled bread, the broad beans in
“landinu” or with lard, the spaghetti with dried
tomatoes, “sa lussarza”, sheep tea and the
“cipollata” with meat sheep, the soup of wild
fennels, the snails in sauce and “sos maccarrones
de ferrittu”.
These dishes, that can be defined first dishes,
find perfect harmony with others (also to a point
of view of their preparation) for their flavours
and their strong taste that recall the true
essence of the earth and the game.
Also the sweet prestige and importance to the
meeting of friends and relatives.
Much delight goes with a good white wine or red
one, a good coffee and a digestive of mirto or
lemon.
